There is quite a strong campaign in the UAE in favour of consuming local sustainable fish.
I have stopped eating hammour because it is overfished, and I now cook different fish on a weekly basis; local fish, rated as sustainable.

I saw this beautiful Shary this morning, when I went shopping with L. (P. stayed home, the poor little thing has developed a very bad chest infection...) and I decided to give it a try. And you know what? I think I have found a new favourite!
Hoy fui a la compra con L. (P. no vino porque está muy malito con una infección...) y ví este precioso Shary, y decidí probarlo a mediodía. Y sabéis qué? Que tenemos un nuevo pescado favorito!

La carne del shary me recuerda mucho a la de la dorada, pescado que en casa nos encanta. Probadlo y contadme qué os parece.
Ingredients for 3: Ingredientes para 3:
- A 1kg Shary fish - Un shary de 1 kg
- 5 limes - 5 limas
- A bunch of fresh parsley - Un puñado de perejil fresco
- A bunch of fresh dill - Un puñado de eneldo fresco
- 2 tbsp rice vinegar - 2 cucharadas de vinagre de arroz
- 2 tbsp sesame oil - 2 cucharadas de aceite de sésamo
- Salt and pepper - sal y pimienta
The recipe is fairly easy. Simply wash and chop the herbs and cut the limes in halves.
Make a couple of cuts on the fish, add salt and pepper, the vinegar and oil, and cover with the limes and herbs.
La receta es bastante sencilla. Lavad y cortad las hierbas, y las limas cortadlas en dos.
Haced además un par de cortes en los lomos del shary, añadid sal y pimienta, el vinagre y el aceite. Por último, cubrid con las hierbas y las limas.
Simply bake it in a pre-heated oven (210ºC) until done - it took us about 20 minutes -
Ya sólo queda meterlo al horno - precalentado a 210ºC - hasta que se haga. El nuestro ha tardado unos 20 minutos.

I am so glad I came across this recipe. I purchased Shari recently but my marinade failed to add anything to the fish and I ended up enjoying the accompanying fried sweet potatoes more than I did the fish. But limes sound like they might do the job. Where I come from citrus fruits practically run in people's blood!!!
